The big Boeings I flew had one red light, and it was out on the wingtip. Everything in the cockpit was white. Some guys flew with the overhead cockpit lights on bright when we were cruising. I never did that, but I did have them on at a low level.
I tried to fly a 150 at night last week trying to get home, but I had the same issue, the light was so dim I could not read the instruments, so I found a hotel and spent the night.
My airplane has white Nulites in the instruments, a white panel floodlight, and red and white panel lights under the glareshield, but I never use the red ones.

Oh, and I put an LED loading light in the baggage compartment. That's it further back behind the speaker.
I also added two map lights, one over each door, switchable to red or white.
