I'm sure you can get some opinions here, if that is a concern.

Because 4 times the data for 5 more bucks is a LOT. Not to mention better coverage.
So more than likely I will end up switching. Amy I'm afraid you'll have to make this decision up front. The data technologies (cell spectrum etc) are different so you either buy an AT&T or Verizon version, and cannot switch without getting a different iPad. (You can upgrade or downgrade plans with either one, but not change carriers)

I'm not sure if I am misunderstanding you, but be aware that there is a Verizon iPad and an AT&T iPad. Once you buy one or the other, you are locked into their network. You can't buy an AT&T one and later decide to subscribe to the Verizon service. You are stuck with AT&T as long as you own that iPad. If you knew this already, please ignore.  Edit: I guess it would help if I read the whole thread before responding. I see Sandy already said the same thing as I just did.

White - it stays a hair cooler when you put it up on the glareshield and it overheats and you get the "I'm too hot message"

And full size over mini - but I have older eyes and like the bigger screen.
and a full size is the same size as the two segments of my trifold kneeboard so I don't think it is such a big deal as some seem to think it is.

AT&T gives you the option to get a dataplan on a month to month basis in case you need it at a future time. (I never have needed to because wi-fi is so readily available.)
I also recommend Dual XGPS150 for better GPS reception.
Then, get an iPhone in case you need internet at remote places.
Reason for my suggestion? That's what I have!
